Guinness Sloppy Joe

By popular request, here’s my recipe for Guinness Sloppy Joe:

Ingredients

  • 1-1/4 pounds 90% lean ground beef
  • 1/2 teaspoon baking soda
  • 2 tablespoons unsalted butter
  • 1 large sweet onion, finely diced
  • 1 red bell pepper, finely diced
  • 1 green pepper, finely diced
  • 4 cloves garlic, minced roughly chopped
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dry mustard
  • 1/2 tablespoon Cafe Bustelo instant coffee
  • 2 tablespoons brown sugar
  • 2 6 oz cans tomato paste (I use ones with garlic and herbs)
  • 1 bottle Guinness Extra Stout (plus more for drinking)
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Coleman’s mustard
  • Hamburger buns
  • Cheese of choice (sliced or shredded)

Make the Sauce

In a bowl, combine approximately one cup of Guiness with one 6 oz can of tomato paste plus 6 tablespoons – the consistency should be a thicker than sauce but thinner than paste

Mix in the Worcestershire sauce and the Coleman’s mustard and stir until thoroughly combined.

Directions

  • In a medium bowl, using your hands, mash the beef with the baking soda. Let it the counter for 20 to 25 minutes to tenderize.
  • Heat the butter in a large skillet over medium heat until bubbling. Add the onion, peppers, and garlic and cook, stirring frequently, until softened, 4 to 6 minutes.
  • Add the ground hamburger and dry spices and brown.
  • Add the sauce and thoroughly combine
  • Bring to a simmer and simmer for at least 12 minutes, stirring occasionally. (I use a splatter screen to cover my pan)
  • Open the buns and place a slice of cheese on each half (if sliced)
  • Put hearty helpings of Sloppy Joe on top of the cheese (cover the meat with shredded cheese if using shredded)

Enjoy with more Guiness and your favorite chip (or crisp).
