Coronavirus Quarantine: Day 6

Today was a good day.

My video lectures went off without a hitch.

I made a music video. My students got to hear me sing Gregorian Chant and some Luther hymns, attempt an oratorio, and hum/bum Beethoven’s Ninth Symphony. 🤣 😂 😆

I made soup for supper: corn & orzo “chicken” soup, which may not actually contain chicken.

  • 6 cups water
  • 2 cups chicken stock
  • 1 can condensed cream of chicken soup
  • 1 can 15oz whole kernel corn
  • 1 1/2 cups orzo
  • 1/2 tbsp onion powder
  • 1/2 tbsp garlic powder
  • 1 tsp ground thyme
  • 1 tsp rosemary
  • 1 tsp oregano leaves
  • 1 tsp celery seeds
  • 1 tsp black pepper
  • Salt to taste
  1. Bring the water and stock to a simmer
  2. Add the condensed soup and seasonings
  3. Whisk until the soup is dissolved
  4. Add the corn and orzo
  5. Bring to a simmer
  6. Simmer for 12 minutes
  7. Salt to taste
  8. Optional: thicken with a few tablespoons of flour
It’s good!
