Today was a good day.
My video lectures went off without a hitch.
I made a music video. My students got to hear me sing Gregorian Chant and some Luther hymns, attempt an oratorio, and hum/bum Beethoven’s Ninth Symphony. 🤣 😂 😆
I made soup for supper: corn & orzo “chicken” soup, which may not actually contain chicken.
- 6 cups water
- 2 cups chicken stock
- 1 can condensed cream of chicken soup
- 1 can 15oz whole kernel corn
- 1 1/2 cups orzo
- 1/2 tbsp onion powder
- 1/2 tbsp garlic powder
- 1 tsp ground thyme
- 1 tsp rosemary
- 1 tsp oregano leaves
- 1 tsp celery seeds
- 1 tsp black pepper
- Salt to taste
- Bring the water and stock to a simmer
- Add the condensed soup and seasonings
- Whisk until the soup is dissolved
- Add the corn and orzo
- Bring to a simmer
- Simmer for 12 minutes
- Salt to taste
- Optional: thicken with a few tablespoons of flour
